breakfast!

So I mentioned I wanted to start blogging about what I’m cooking and eating and my basic health regime. With the new year upon us I figured there was no time better than the present to begin sharing what I have really started to enjoy incorporating into my life.

To begin, here’s what I ate for breakfast this morning, the kabucha squash and lemons aren’t actually part of the menu but they’re such beautiful fruits and veggies I decided to invite them into the shot as well.

It’s called “overnight oats” and it’s super easy to make.  On the weekends I make just enough for the next day since I prefer it fresher but I cook much more during the week because I don’t have as much time in the mornings to deal with the pan cleaning etc.

In any case this is what I use:
1/3 cup organic steel cut oats
2/3 cup water
pinch of salt
lots of cinnamon

Bring to boil in saucepan for 1 minute and then remove from heat and place lid on the pot and leave overnight. In the morning transfer to a microwavable bowl, add 1/4 cup of vanilla soy milk and microwave for 1.5 min or until nice and hot. Stir well and let thicken for about a minute then add about 1/2 teaspoon of almond butter and more cinnamon to taste (can you tell I love cinnamon??) Enjoy!

You can also add 1/2 a banana before nuking for more potassium and I plan on adding some flax as soon as I go shopping again. This has about 250 calories as it is and is an excellent breakfast. I usually follow it mid morning with a cup of Fage 0% yogurt and a small apple.

Now I’m off to do some power Vinyasa yoga at home and then meet a friend to check out the Museum of Water in the city and perhaps explore a bit. Have a great day!
