super healthy lunch

Another amazing yoga class and another delicious lunch. Today I completely got my butt kicked by a pose called bird of paradise. It looks like this:

Once again the darned thing looks so much easier than it is. Take my word for it. The room had to have been 115 degrees today too since it was a daytime class and the sun was shining in. Between the heat and the challenge of the class it was an incredible experience.

While we were gearing up for the walk home afterward I mentioned to Jeni the fact that my quinoa batch was a little spicy and she made the most awesome suggestion:

Take the spicy quinoa

add some Fage yogurt:

    You do a lot qith quinoa. To be honest it has never looked that appetizing to me but you make is look delicious. How do you do it?

    It’s delicious hot or cold so it’s a perfect dish to make in bulk and bring to work all week. Also, quinoa is a complete protein which means it contains all of the essential amino acids. So when you fill up on it you’re boosting your immune system, helping your digestion, supporting healthy hair and skin and generally loving your body. It’s wonderful!
